Scallions, Green Onions, and Spring Onions are small, with their tender greens still attached to the small white thin bulbs. They are long and slender with white roots fading into green tops.

They have a bright and delicate flavor.
Though they are related to onions, leeks and ramps have a more subtle and noble flavor.

Garlic has been used since time immemor-ial as a seasoning. If you love it, you can't get enough of it. If you don't, try it in smaller amounts.

The two major categories for dry onions are storage onions and sweet onions. Storage onions are low in water and high in sulfur, so they store well and are usually available at any time. The new sweet hybrid onions, such as Vidalia, Maui, 1015 Y, Texas Spring Sweet and Walla Walla are usually available in Spring and Summer unless they are imported in. Every year, more and more hybrid varieties arrive on the scene. And believe it or not, each one seems to be better and better. People that don't think they like onions, love some of the new sweet varieties. Experiment, the flavors will amaze you! (By the way, if you get hooked on the sweet onions, you can chop them and freeze them for cooking when they are out of season.)
