Sweetness
in onions is more accurately termed 'the lack of pungency'.
Sugar levels really don't determine if an onion will be
sweet. Some pungent onions actually have more sugar in them
than "sweet onions".
The
sweet flavor or sugar is masked out by a very high presence
of sulfur compounds. The low amount of sulfur compounds
and high water content in sweet onions allows the sugar
flavor to come through.
For
really sweet onions, these are a few of the names to look
for: Vidalia, Walla Walla, Granex, Sweet Imperial, Texas Spring
Sweet, Texas 1015Y, Carzalia Sweet, Oso Sweet, Arizona and
Maui.
These
onions and very mild, crisp and sweet. They are perfect
for salads and for slicing raw on burgers and sandwiches.
These large onions can be cooked too. They are perfect for
just about everything.
