Tabasco peppers are pale yellow-green maturing to yellow then orange and then red.

They have a thin flesh with a sharp, biting heat.

In the 1840's, the tabasco pepper was cultivated near Tabasco, Mexico. In 1848, it was transferred to Louisiana where after the Civil War the famous McIlhenny family began growing Tabasco peppers on Avery Island.
Tabasco Peppers
They fermented a pepper sauce and named it Tabasco®. The peppers which are very difficult to pick are grown in Central America and Columbia and then shipped back to Louisiana for manufacture.
