| In the 1840's,
the tabasco pepper was cultivated near Tabasco, Mexico. In 1848, it was transferred
to Louisiana where after the Civil War the famous McIlhenny family began growing
Tabasco peppers on Avery Island.
|
| They
fermented a pepper sauce and named it Tabasco®. The peppers which are very
difficult to pick are grown in Central America and Columbia and then shipped back
to Louisiana for manufacture.
