Ginger is a spice and its name means "horn root". Though it smells very spicy, the flavor is a combination of sweet and peppery. Originally, it was primarily used in Asian and Indian cuisine.
Ginger Root
Ground ginger is most commonly used in European and American cooking in baked goods. Ground ginger tastes different than fresh. The two should not be substituted in most baked goods.
