They are available whole and dried, or as a dull yellow powder, ground from the roasted seeds.

Dried seeds should be lightly roasted before using (don’t overdo, they will become bitter). After roasting, they are easily ground.

Curry Powder and Sambhar Powder are the two spice blends that contain Fenu-greek. There are a few other blends that utilize Fenugreek such as Turkish Cemen, (fenugreek, garlic, and chiles). Used alone it will retard the flavors of food.

The spice funugreek is the small yellowish to brown, almost golden colored, odd-shaped seeds from the pod of a bean-like plant. The seeds are very hard and have many varied shapes, oblong, round and square.
Fenugreek
Their smell is warm and pungent. Their taste is very powerful and aromatic, bitter yet sweet. A small amount will complement many other spices, but is you add to much the taste can be overpowering.
