Capers are the tiny pickled, unopened flower buds of the caper plant. The small buds are picked, sun-dried and then pickled in a vinegar brine. Capers are usually packed in brine but can also be found salted.

Capers range in size from the small variety from southern France , to those from Italy, which can be as large a plump pea. There are also the Spanish imported stemmed berries the size of a cocktail olive.
