Ajowan
is a spice native to Southern India. The seeds look like caraway, but they
taste like a very strong and pungent version of thyme. In Indian cuisine, they
are often sprinkled on breads and used in starchy foods.
They
are also used with root vegetables, legumes and bean dishes. It
possesses some medicinal properties that can aid in problems of digestion like
flatulence which explains its frequent use in bean dishes.
