Zesty Lime Chicken Breasts
Serve with Rice and a Green Salad

Serves 4

• 1/2 cup lime juice (from about 4 limes)
• 3 tablespoons sugar
• 2 tablespoons freshly ground black pepper
• 1 teaspoon olive oil
• 3/4 teaspoon salt
• 1/4 cup water
• 4 - 6 ounce boneless, skinless chicken breast halves

Combine lime juice, sugar, pepper, oil, salt, and 1/4 cup water in a large bowl or resealable plastic bag. Stir to dissolve sugar and salt. Set aside.

Place each chicken breast half between 2 large pieces of plastic wrap. Using a mallet, pound chicken to an even1/3 inch thickness. Put chicken in bowl or plastic bag with marinade. Repeat with remaining breasts. Cover or seal and refrigerate for 30 minutes.

Grill on indoor or outdoor grill until cooked through. Serve immediately
