Italian Turkey Sausage Meatloaf
Serve with a Green Salad

Serves 8

• 1 cup shredded carrots
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 2 teaspoons oil
• 1 cup panko
• 1 egg, beaten
• 1 /3 cup skim milk
• 1/4 cup fresh minced parsley
• 1/2 teaspoon dried thyme leaves
• 1 pound ground turkey breast (99% fat free)
• 1 pound hot or sweet Italian turkey sausasge, casings removed
• 1/3 cup organic ketchup
• 1 tablespoon brown sugar
• 1/2 teaspoon dry mustard
• 1/8 teaspoon black pepper

Preheat oven to 350 degrees. Spray a 9x13" baking pan with non-stick cooking spray. In a medium saucepan sprayed with cooking oil, cook carrots, onion, and garlic until tender. Place in large bowl and add bread crumbs, egg, milk, parsley, and thyme until well blended. Let stand 10 minutes.

Add ground turkey and turkey sausage with casings removed and mix gently just until combined. Shape into a large loaf about 2-1/2" high. Place in prepared pan. Mix ketchup, brown sugar, dry mustard, and pepper in a small bowl and spread over loaf.

Bake at 350 degrees for 45-60 minutes or until thoroughly cooked and meat thermometer registers 160 degrees. Cover with foil and let rest 10 minutes before slicing. 8 servings.
