Crab Stuffed Flounder
Excellent with just a green salad.

Serves 4

6 green onions, chopped
1 small green pepper, chopped
2 teaspoons olive oil
4 flounder fillets, about 2 pounds total
1 pound crabmeat
1/3 cup fresh breadcrumbs or panko
1 small egg (Slightly Beaten)
Old Bay Seasoning
Salt and pepper to taste
1/4 cup low fat mayonnaise, plus 2 tablespoons more to rub on flounder (we used Hellmann's®)

Sauté onions and green pepper in oil.

In small bowl, gently blend by hand crabmeat, bread crumbs, egg, seasonings and mayonnaise.

Place flounder on greased cookie sheet. Spread mayonnaise on flounder and sprinkle flounder with Bay seasoning and paprika.

Top with crabmeat blend and bake at 350°F for 20-25 minutes.

Per Serving (1 fillet and 1/4 of the crab stuffing): 374 Calories; 9g Fat (21.5% calories from fat); 2g Saturated Fat; 65g Protein; 6g Carbohydrate; 1g Dietary Fiber; 237mg Cholesterol; 741mg Sodium. Exchanges: 9 Lean Meat; 1/2 Vegetable; 1/2 Fat.
