Cod Fish Cakes
Serve with your favorite low fat tartar
sauce .
1 potato, cubed
and cooked, cooled
1 1/2 cups panko (or plain breadcrumbs)
1/3 cup sliced scallions
1/3 cup chopped red peppers
3 tablespoons parsley
1 teaspoon oregano
salt and pepper
1 beaten egg plus 1/4 cup egg substitute
1 1/2 pounds cod fish fillets, cooked
1 clove garlic, minced
2 tablespoons oil, divided
Cooking oil spray
Preheat oven to 350degrees F.
Mash, cooled cubed cooked potato. Add remaining ingredients and shape
into 12 patties. Add 1 tablespoon oil to skillet and add 6 patties, cook
2 minutes on each side. Spray a baking sheet with cooking spray and add
cooked patties.
repeat, then add 12 patties to oven, bake for 10 minutes and serve with
sauce.
