Cilantro Grilled Chicken
2 tablespoons minced fresh cilantro Pound chicken breasts between 2 sheets of plastic wrap until even thickness. Combine first cilantro, lime juice and olive oile in large bowl; add chicken and coat; let marinate covered in refrigerator for 1 hour. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done. Serve with your favorite fresh salsa. These are also excellent on a outdoor grill.
