Baked Orange Roughy
Serve with a green salad or steamed green beans.

Servings: 4

• 1 1/2 pounds orange roughy fillet
• 1 tablespoon reduced-calorie margarine
• 1 tablespoon parmesan cheese
• 1 green onion, chopped

Preheat oven to 400 degrees.

Spray pan with nonstick cooking spray. Arrange filets in a single layer. Mix cheese and margarine. Spread over filets. Sprinkle with onion.

Bake for 10 minutes or until fish flakes.
