Curried Pork Kebob Marinade
Makes enough marinade for one pound of boneless pork loin cut into
cubes.
1 cup plain low fat yogurt
2 tablespoons orange juice
1 tablespoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
1/4 teaspoon ground ginger
In medium bowl stir together yogurt, orange juice and seasonings. Blend
well. If using bamboo skewers, soak in cold water for an hour before using.
If using pork, add pork cubes to bowl, stir to coat with marinade. Cover
and refrigerate 4 hours. Remove meat from marinade; with paper towels
lightly pat dry. Skewer meat evenly on skewers or alternate with choice
of vegetables. Grill over medium-hot coals, turning frequently, for about
10 minutes, until nicely browned.
Absorption
rate will vary with different meats. This analysis is based on a rate
of 100% for a serving of 4 and will be less than stated in actual use.
