Salad:
6 cup torn spinach leaves
1 cup mushrooms, sliced thinly
1/3 cup sweet red
onion, sliced thinly
1 can Mandarin orange segments, reserve juice
Wash spinach leaves
well. Blot dry and tear into bite size pieces. Drain orange segments,
reserving 2 tablespoons juice for dressing. Toss spinach, mushrooms, onions
and oranges.
Mix all dressing ingredients
together and mix well. Spoon over salad. Garnish with toasted sesame seeds
if desired.
