12 cups baby spinach leaves, cleaned, trimmed and stems removed 1/8
teaspoon fine sea salt, or to taste 1/4 teaspoon fresh ground black
pepper 2 tablespoons extra-virgin olive oil Fresh lemon juice
4 very thin slices of sweet red onion
Gently toss together baby spinach,
sea salt, pepper, and 1 tablespoon oil. Mound salad on plates and drizzle with
remaining oil and a splash of lemon juice. Top with sweet red onion slices
