Sliced Roasted Potatoes
3/4 pound baking
potatoes, cut into 1/4 inch slices (with or without peel) Clean and wash potatoes. You can leave the skin on or peel. Slice potato in 1/4 inch thick slices. Combine potato, balsamic vinegar and oil in a bowl and toss to coat. Arrange potato slices in a single layer on a baking sheet that has been coated with cooking oil spray. Bake in a preheated 400 degree F. oven for 30 minute or until tender, turning once. Sprinkle with salt and pepper. Per Serving: 156 Calories;
