Italian Potato Salad
Serve at your next barbecue
6 potatoes,
peeled, cooked, diced
1 cup diced celery
1 cup thinly sliced & chopped red
onions
1/3 cup fresh parsley,
chopped
1/4 cup fat-free Italian salad dressing
3 tablespoons wine vinegar
2 teaspoons salt
freshly ground black pepper
to taste
Combine hot potatoes
all other ingredients in a large bowl. Cover and refrigerate for 1 to
two hours to let flavors blend.
