• 3 cups plain yogurt, drained
to make yogurt cheese
• 3/4
cup finely chopped cilantro
• 4
1/2 tablespoons fresh lemon juice
• 1
1/2 teaspoons finely chopped garlic
• 3/4
teaspoon cayenne pepper*
Thicken 3 cups regular plain yogurt by draining it
in a paper-towel-lined sieve or cheese cloth lined collander, chilled,
at least 1 hour and up to 1 day.
Stir together all ingredients with 1 teaspoon salt
(or to taste), then chill, covered, at least 30 minutes (for flavors
to blend). Bring to room temperature before serving.
COOKS NOTE: This has a little kick, so if you are
sensitive to heat reduce the cayenne pepper.
