1/3 cup light cream cheese (neufchatel cheese)
1/2 teaspoons dried basil
8 - 1 ounces sliced whole wheat bread
4 - 3/4 ounce slices fat-free sharp Cheddar cheese
4 - 3/4 ounces slices fat-free mozzarella cheese*
Canola cooking oil spray
Combine cream cheese and basil, stirring well. Spread cream cheese
mixture evenly over 1 slide of 4 bread slices. Place one slice of
Cheddar cheese and one slice of mozzarella cheese over cream cheese
mixture. Top with remaining bread slices.
Lightly
s pray outsides (both sides) of sandwiches with vegatable cooking
oil spray and place in a nonstick skillet (or sandwich grill, a
George Foreman grilled works great too!) and cook 1 minute on each
side or until bread is browned and cheese begins to melt. Serve
immediately.
*
May also use fat-free Swiss cheese.
