Blackened Chicken Sandwiches

paprika Spray a nonstick skillet with cooking oil spray. Heat skill on medium high heat. Cook turkey bacon until crisp. Break pieces into two pieces and set aside. OR To microwave bacon, arrange 4 slices on paper plate and cover with paper towel. Arrange remaining 4 slices on top of toweling and cover with another paper towel. Microwave on HIGH for 7 to 8 minutes or until bacon is crisp. Make sure chicken is thin cut. If not pound between two pieces of plastic wrap. Grill chicken for 2 minutes. Turn over and continue to grill an additional 1 to 2 minutes. Spread each slice toast with 2 teaspoons prepared mayonnaise. Top four sides of toast with chicken, then top each with 2 lettuce leaves, 1 slice tomato and 2 bacon pieces. Top each with remaining 4 slices toast, mayo side down and serve.
