Fresh Garden Feta Salad
Serve with hot fresh French bread.

Salad:
3 cucumbers, peeled, halved, seeded & sliced in 1/4 inch
slices
2 cups cherry tomatoes, halved
1 large red bell pepper, chopped
1/4 cup green onion, chopped
1/4 cup pitted kalamata olives
1/2 cup low fat feta cheese
8 - 12 green or red leaf lettuce leaves
Dressing:
1 tablespoon red wine vinegar
2 tablespoons balsamic vinegar
1/2 teaspoon granulated sugar
1 tablespoon extra virgin olive oil
1/4 cup shredded fresh basil
1/2 teaspoon ground sea salt
freshly ground black pepper to taste

Mix dressing ingredients
in a large salad bowl and mix well. Add remaining ingredients except for
lettuce leaves and toss well.
Serve on bed of green
or red leaf lettuce.
