Turkey Meatloaf
Serve with Green Bean and New Potatoes

Serves 6

• 1 teaspoon olive oil
• 1 medium onion, chopped (1 cup)
• 1/2 teaspoon kosher salt
• 1/4 teaspoon pepper
• 1 tablespoons Worcestershire sauce
• 2 teaspoons yellow mustard
• 1/4 cup organic ketchup or 2 tablespoons tomato paste
• 1.25 pounds ground turkey, 97% lean
• 3/4 cup panko
• 1 small egg, lightly beaten

Preheat oven to 350°. Heat oil in medium skillet over medium heat. Add onion and cook, stirring frequently, until soft, about 5 minutes. Let cool.

Add ground turkey, worcestershire sauce, ketchup, mustard, breadcrumbs, egg, and salt and pepper to mixture in bowl, and mix well.

Place misture in a loaf pan. Bake 1 hour or until thermometer inserted into center registers 170°. Let meatloaf stand 5 minutes before serving.

COOK'S NOTE: You can use meat mixture to stuff bell peppers as well. It also makes great meatloaf sandwiches and is delicious served with fat free white country cream gravy. Who said it has to be topped with ketchup?
