Thai Chicken Thighs
Serve with a rice and steamed vegetables.

Servings: 6

• 12 boneless skinless chicken thighs
• 1/3 cup chopped fresh basil
• 1/3 cup chopped fresh cilantro
• 1 tablespoon minced ginger
• 1 tablespoon minced garlic
• 1 tablespoon minced jalapeno pepper
• 1 1/2 tablespoons light soy sauce
• 1 1/2 tablespoons fish sauce
• 1 1/2 tablespoons olive oil
• 1 1/2 tablespoons brown sugar

Combine all ingredients except chicken in a bowl. Mix thoroughly. Add chicken and leave to marinate at least one hour, preferably longer.

Grill chicken on the BBQ, hotplate or in the griller until golden brown and cooked through.
