Scallops in Tomato Sauce
Serve over Angle Hair Pasta!

Servings: 3

• 2 teaspoons olive oil
• 1/4 cup finely chopped green onion
• 1 teaspoon finely chopped garlic
• 16 sea scallops
• 1 1/2 cups chopped tomatoes
• 1 cup tomato sauce
• 1/4 teaspoon salt (or to taste)
• 1/4 teaspoon fresh ground black pepper
• 1/4 teaspoon red pepper flakes (or to taste)
• 1 teaspoon Italian seasoning

Heat olive oil in large skillet. Add green onion and garlic, saute 1 minute.
Add scallops, saute for 2 minutes on each side. Remove and keep warm.

To skillet, add chopped tomato, tomato sauce and seasonings. Bring to a boil, and simmer while stirring for 1 minute. Add scallops and heat until heated through.

Serve over angle hair pasta. Garnish with chopped fresh Italian parsley and grated Parmesan cheese.

COOKS NOTE: Recipe can easily be doubled.
