Salmon with Caper Sauce
Heat nonstick skillet on medium high heat. When hot, add the salmon fillet and season with salt and fresh ground pepper.
Cook the salmon for approximately 5 minutes each side, until the fish flakes when tested with a fork.
Transfer salmon to a dish and cover to keep warm.
Add minced garlic to skillet and cook for 1 minute or until garlic turns golden. Add capers and cook for 1 minute longer. Add the chicken broth, lemon juice and grated lemon rind. Heat thoroughly while stirring occasionally.
Spoon sauce over warm salmon. Garnish with thin slices of lemon.
