Meatballs in Mushroom Sauce
Serve with mashed potatoes if desired.

Serves 6

Meatballs
1 teaspoon olive oil
1 small onion, minced
1 clove garlic, minced
1/4 cup minced parsley
1.3 pounds ground turkey breast
1 egg
1/4 cup panko
1/2 teaspoons kosher salt
1/4 teaspoon black pepper

Mushroom Sauce
1 tablespoons olive oil
2 cups fresh mushrooms
1/4 cup flour
1 1/2 teaspoons chicken bouillon powder
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
2 cups skim milk
1/2 cup dry white wine

In a large nonstick fry pan, heat oil on medium heat, add onion and saute until onions are translucent. Add garlic and parsley and cook until wilted, about 3
- 4 more minutes. Let cool a few minutes.

In a large bowl combine turkey, egg, onion mixture, panko, salt, pepper. Mix well and form meatballs into 1 inch balls.

Spray nonstick fry pan with olive oil (about 1 teaspoon for all meatballs) and brown on all sides until cooked through. Remove and set aside.

Heat oil in frying pan. Add mushroom and onions and sauté until soft.

Mix in remaining ingredients and simmer for about 4 minutes, until thickened, stirring often.

Add meatballs and simmer until heated through.
