Lemon Pepper Fish
Love this with Cole Slaw.

Serves 4

1 tablespoon grated lemon rind
3 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
4 garlic cloves, smashed
1 tablespoon course cracked black pepper
1/2 teaspoon kosher salt
2 pounds fish fillets (we used orange roughy for nutritional values)

Mix all the ingredients in a large glass bowl. Add fish. Stir to incorporate, cover and refrigerate for 30 minutes.

Bake, broil, grill, or pan saute your fish.
