Grilled Lime Chicken
Serve with a green salad and corn relish.

Servings: 6

• 1 cup dry white wine or low-sodium chicken broth
• 1/2 cup chopped fresh Italian parsley
• 1/2 teaspoon grated lime rind
• 2 tablespoons fresh lime juice
• 1/2 teaspoon freshly ground black pepper
• 6 - 6 ounce boneless, skinless chicken breast halves
• Cooking oil spray

Combine first 5 ingredients in a shallow glass baking dish. Add chicken, turning to coat. Cover and marinate in refrigerator for 1 hour.

While chicken marinates, prepare the grill.

Remove chicken from marinade, reserving marinade. Place marinade in a small saucepan; bring to a boil, and remove from heat. Place chicken on grill rack coated with cooking spray. Grill, covered, 5 minutes on each side or until done, basting with marinade. Remove from grill, and serve immediately.
