Cod Fish Cakes
Serve with your favorite low fat tartar sauce .

Servings: 4

• 1 potato, cubed and cooked, cooled
• 1 1/2 cups panko (or plain breadcrumbs)
• 1/3 cup sliced scallions
• 1/3 cup chopped red peppers
• 3 tablespoons parsley
• 1 teaspoon oregano
• salt and pepper
• 1 beaten egg plus 1/4 cup egg substitute
• 1 1/2 pounds cod fish fillets, cooked
• 1 clove garlic, minced
• 2 tablespoons oil, divided
• Cooking oil spray


Preheat oven to 350degrees F.

Mash, cooled cubed cooked potato. Add remaining ingredients and shape into 12 patties. Add 1 tablespoon oil to skillet and add 6 patties, cook 2 minutes on each side. Spray a baking sheet with cooking spray and add cooked patties.
repeat, then add 12 patties to oven, bake for 10 minutes and serve with sauce.
