Breaded and Baked Haddock
Serve with Tartar Sauce

Serves: 4

3/4 cup buttermilk
1 teaspoon kosher salt
3/4 cup bread crumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon ground dried thyme
4 haddock fillets (about 6 ounces each)
1 tablespoon olive oil in Misto sprayer

Preheat oven to 500 degrees. (Yes it is a high temperature, but it is what gives the coating a little crunch)

In a small bowl, combine the buttermilk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the buttermilk, then press into the crumb mixture to coat. Place haddock fillets in a baking dish on a rack, spraying both sides generously with olive oil.

Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes. Serve with a low fat tartar sauce and lemon wedges.
