Terrific served over steamed white rice or even on a sandwich.
2 lbs boneless
chicken breasts, cut into bite size pieces
1 tablespoon olive oil
1 clove garlic, minced
1/4 teaspoon ground ginger
1/2 to 3/4 teaspoon red pepper flakes
1/4 cup apple juice
1/3 cup brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup fat-free chicken broth
1/3 cup reduced sodium soy sauce
Heat oil in a large
skillet. Add chicken breast pieces and cook until lightly browned. Remove
chicken from pan and set aside.
Add remaining ingredients to pan and heat over medium heatstirring well.
Return chicken to pan and bring to a boil. Reduce heat and simmer for
20 minutes. Serve over hot white rice or in a sub sandwich or a lettuce
